Recipe: The Ultimate Sandwich

This sandwich is everything. It’s more than that– it’s a complete flavor explosion. We found this recipe on one of our favorite new plant based food blogs The Wild Beet. Look, we enjoy a good steak as much as the next person, but this whole foods vegan blog has us drooling with these amazing recipe creations! So much that we tried this little number out ourselves and , well… let’s just say we have our go-to summer beach food down now. Good recipes are for sharing, so say hello to The Wild Beet’s Rainbow Bomber.

The Wild Beet’s Rainbow Bomber 
1 rustic french baguette, sliced into two 6″ pieces
1/4 c pesto (recipe here)
1 small butternut squash, roasted and mashed
1 purple yam, thinly sliced
4 small purple heirloom potatoes
1 haas avocado, halved then thinly sliced
1 c baby spinach
2 tsp maple syrup
1 tbsp earth balance butter
2 tbsp veganaise
cayenne pepper, garlic powder, paprika
extra virgin olive oil
salt & pepper to taste
Preheat your oven to 400 degrees. Rinse the butternut squash, dry, then place into the oven whole. Roast for 30-40 minutes or until tender when poked. Slice open, gut the seeds, and scoop contents into a large mixing bowl, add 1 tbsp earth balance butter, 2 tsp maple syrup, and salt to taste. Mix and Mash together until smooth. Set aside.
Set the purple yams inside a large mixing bowl. Drizzle extra virgin olive oil over the yams, ladd a few grinds of salt (I use himalayan), then evenly distribute the salt and extra virgin olive oil amongst the yams. Place each yam on a baking sheet (each in their own spot).
In another mixing bowl, drizzle extra virgin olive oil over the heirloom potatoes and lightly season them with the garlic powder, paprika, salt, pepper, and a light sprinkle of cayenne. I don’t use measurements for these spices, as I know my palette. Use your judgement and add the spices to your liking. Rub oil, spices and potatoes together evenly. Transfer each seasoned potato slice to a baking sheet (each in their own spot). Depending on your oven, cook for about 12-15 minutes, or until tender and slightly crispy at the skin.
Place the bread in the oven and lightly toast for 3-5 minutes (depending on your oven). Remove when ready.
It’s time to set up your Bombers! On the bottom half of the baguette spread pesto over entire slice generously and place 3 slices of avocado on top evenly throughout the bread. Add 3 slices of the yams on top of the avocado layer, followed by 2 heirloom potatoes with a few leaves of baby spinach on top.  On your top slice spread the maple butternut squash evenly throughout the slice, add a light layer of veganaise on top, then finish off with some freshly ground pepper. Put the sandwich together, take a sit, sit down, and strike up the band.
Serves 3.


Thursday Movie Night: Dazed & Confused

One of our favorite cult classics and coming of age movies from the 1990s has to be Dazed & Confused. Are we right? A young Matthew McConaughey, Milla Jovovich, and baby faced Ben Afleck? Yes, please! The 70s style and humor in this movie have set the tone for timeless quoting. Who could forget Matthew’s infamous “Alright, alright, alright!”?

Now, it’s only appropriate to snack to the death with this movie. (Insert stoner joke here). So, we’re sharing this ultimate brownie recipe in proper Dazed and Confused fashion.



Dazed & Confused Munchie Brownies

1/2 c vegetable oil

1 c white sugar

1 t vanilla extract

2 eggs

1/2 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts (optional)

Prehear oven to 350 degrees F. Grease a 9×9 baking pan.

In a medium sized bowl, mix together the oil, sugar, and vanilla. Beat in eggs. Combine flour, cocoa, baking powder, and salt; gradually stir into the egg mixture until well blended. Stir in walnuts, if desired. Spread the batter evenly into the prepared pan.

Bake for 20-25 minutes, or until the brownie begins to pull away from edges of pan. Let cool on a wire rack before cutting into squares and enjoy!

Thursday Movie Night: Almost Famous

Happy Thursday party people! It’s time to spice things up with a little #tbt movie night. We’re going to throw it back with one of our favorite 2000s flicks, Almost Famous. Words cannot describe our love for this 1970s inspired film. And, really, who can forget on screen boho rock goddess and bandaid Penny Lane? Not us. That furry leather coat. Now words, just epic. If you’re in the Santa Barbara county, we recommend stopping by one of our favorite wineries Municipal for a bottle of their amazing Pale Pink Rose– DELISH. All grapes are handpicked from special Santa Barbara county vineyards. The nose of his wine has spices like nutmeg and cardamon, along with a palette of sandalwood and fruity strawberry and cherry notes. I mean, if you’re going to have a movie night, do it the right way. Get ready for a night of 1970s style, #boho4ever , fine wine, golden gods, and rock and roll!

Quick Summer Beach Waves

So, as much as we’d like to wake up extra early every morning to bathe our hair in beach water.. we’ve realized this just isn’t realistic– and we live in Santa Barbara! Beach waves aren’t only the ultimate summer ‘do, they’re year round if you live a #boho4ever lifestyle. We found this easy, adorable hair tutorial illustration from She Lets Her Hair Down and had to share! All you need is hairspray, a curling iron, and hair clip and it’s hello to easy breezy beach waves in 4 steps. Killer, right? Let’s get started.

What You’ll Need:

1″ curling iron


medium hair clip (to hold hair sections)



First, prep your hair by spraying a light hold hairspray all over.

1. In sections, curl all of your hair so it goes away from your face.

2. Without clamping the iron shut, hold your curling iron with the tip pointing down and wrap your hair around it starting as close to your scalp as possible.

3. After curling each section, tug on it by holding the ends and pulling down on your hair. This will give you a soft be achy waves as opposed to Sweet 16 curls!

4. Once everything is curled, tousle and toss out your hair. You’re done!

The Perfect Skin Detox Blueberry Smoothie


Happy Summer Solstice!

We’re smoothie obsessed here at Koolaburra HQ, especially now that the warm summer sun has officially made it’s home here in Santa Barbara. With all this summer sun hitting us, we have to be wary of protecting our skin, and we’re not just talking about sunblock. Smoothies are not only delicious but they benefit different areas of our bodies depending on the ingredients. And since we’re on the topic of skin, there’s nothing like this blueberry smoothie right here. Blueberries are huge in antioxidants and other nutrients and vitamins that are good for the skin! Whether it’s acne, splotchy skin, or overall complexion– blueberries are basically you’re bestie this summer.

Blueberry Coconut Smoothie

1 cup Blueberries

 1/4 cup Young Coconut Meat

1/2 cup Young Coconut Water

1 tsp honey

Put all the ingredients into a blender and say hello to glowing skin.
